  • 1 tbsp olive oil
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 1 tbsp fresh ginger grated
  • 1.5 lbs sweet potatoes peeled and cubed
  • 1 cup red lentils rinsed
  • 4 cups vegetable broth low-sodium
  • 1 can coconut milk 13.5 oz can
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 0.5 tsp turmeric
  • 1 tsp salt or to taste
  • 0.5 tsp black pepper freshly ground
  • 3 cups kale chopped, stems removed
  • 2 tbsp lime juice freshly squeezed
  • cilantro for garnish

Instructions

Preparation Steps

  • Heat olive oil in a large pot over medium heat. Add onion and sauté until translucent, about 5 minutes.
  • Stir in garlic and ginger, and cook for another 2-3 minutes until fragrant.
  • Add sweet potatoes, red lentils, vegetable broth, coconut milk, cumin, coriander, turmeric, salt, and pepper. Bring to a boil, then reduce heat and simmer for 25-30 minutes, until sweet potatoes are tender.
  • Add chopped kale and cook for another 5 minutes, until kale is wilted.
  • Stir in lime juice, adjust seasoning if necessary, and serve hot, garnished with cilantro.

Notes

This dish can be stored in the fridge for up to 3 days in an airtight container. Reheat well before serving.
