  • 3 cups peeled and diced potatoes Russet or Yukon Gold
  • 1.5 cups half-and-half
  • 2 cans clams with juice
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp thyme dried
  • 2 tbsp fresh parsley chopped, for garnish

Preparation Steps

  • In a large pot, melt butter over medium heat. Add onions, celery, leeks, and garlic. Cook until vegetables are tender, about 5 minutes.
  • Stir in flour until blended. Gradually add clam juice, whisking to prevent lumps. Bring to a boil.
  • Stir in potatoes; return to a boil. Reduce heat; simmer uncovered until potatoes are tender, about 15 minutes.
  • Add half-and-half, clams, salt, pepper, and thyme. Stir gently to combine. Heat through, but do not boil.
