  • 1 medium spaghetti squash about 3-4 pounds
  • 1 pound boneless skinless chicken breasts cut into cubes
  • 2 tablespoons olive oil divided
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 0.5 teaspoon salt to taste
  • 0.5 teaspoon black pepper to taste
  • 1 cup marinara sauce homemade or store-bought
  • 1 cup shredded mozzarella cheese
  • 0.5 cup grated Parmesan cheese
  • 2 tablespoons fresh basil chopped, for garnish

Instructions

Preparation Steps

  • Preheat the oven to 400°F (200°C).
  • Cut the spaghetti squash in half lengthwise and remove the seeds. Brush the inside with 1 tablespoon of olive oil, then sprinkle with salt and pepper.
  • Place the squash halves cut side down on a baking sheet and roast for 35-40 minutes or until tender.
  • Meanwhile, in a large skillet, heat the remaining tablespoon of olive oil over medium heat. Add the cubed chicken, garlic powder, onion powder, Italian seasoning, salt, and pepper. Cook until the chicken is golden and cooked through.
  • Stir in the marinara sauce and let it simmer for 5 minutes.
  • Once the spaghetti squash is cooked, use a fork to scrape out the strands. Mix the squash with the chicken and marinara mixture, then transfer to a baking dish.
  • Top with shredded mozzarella and grated Parmesan cheese. Bake in the oven for 10 minutes or until the cheese is melted and bubbly.
  • Garnish with fresh basil before serving.

Notes

For a spicier kick, add a pinch of red pepper flakes to the chicken mixture.
