Instructions
Preparation Steps
Preheat oven to 375°F (190°C).
In a large skillet over medium heat, cook ground beef until browned. Drain any excess fat.
Add taco seasoning and water to the skillet, stirring to combine. Cook for another 5 minutes.
Stir in black beans, corn, and diced tomatoes with green chilies. Heat through.
Transfer the beef mixture to a 9x13-inch baking dish. Sprinkle 1 cup of cheese over the beef mixture.
Arrange tater tots in a single layer over the top of the cheese.
Bake in preheated oven for 30 minutes, or until tater tots are golden and crispy.
Remove from oven and sprinkle remaining cheese on top. Bake for an additional 5 minutes or until cheese is melted.
Garnish with chopped green onions and serve with sour cream if desired.
Notes
This casserole can be made ahead of time and frozen for up to 3 months. Simply reheat in the oven before serving.
