  • 1 pound ground beef lean
  • 1 packet taco seasoning 1 oz
  • 0.75 cup water
  • 1 can black beans drained and rinsed
  • 1 can corn drained; 15 oz can
  • 2 cups shredded cheddar cheese
  • 1 bag frozen tater tots 32 oz
  • 1 can diced tomatoes with green chilies 10 oz; drained
  • 0.5 cup chopped green onions optional; for garnish
  • 0.5 cup sour cream optional; for serving

Instructions

Preparation Steps

  • Preheat oven to 375°F (190°C).
  • In a large skillet over medium heat, cook ground beef until browned. Drain any excess fat.
  • Add taco seasoning and water to the skillet, stirring to combine. Cook for another 5 minutes.
  • Stir in black beans, corn, and diced tomatoes with green chilies. Heat through.
  • Transfer the beef mixture to a 9x13-inch baking dish. Sprinkle 1 cup of cheese over the beef mixture.
  • Arrange tater tots in a single layer over the top of the cheese.
  • Bake in preheated oven for 30 minutes, or until tater tots are golden and crispy.
  • Remove from oven and sprinkle remaining cheese on top. Bake for an additional 5 minutes or until cheese is melted.
  • Garnish with chopped green onions and serve with sour cream if desired.

Notes

This casserole can be made ahead of time and frozen for up to 3 months. Simply reheat in the oven before serving.
