Instructions
Preparation Steps
Bring 1.5 cups of water to a boil. Remove from heat, stir in couscous, cover and let sit for 10 minutes until water is absorbed.
Fluff the couscous with a fork and transfer it to a large mixing bowl to cool.
Add the halved cherry tomatoes, diced cucumber, crumbled feta cheese, and chopped parsley to the couscous.
In a small bowl, whisk together olive oil, lemon juice, dried oregano, salt, and pepper.
Pour the dressing over the couscous mixture and toss gently to combine all ingredients.
Serve chilled or at room temperature.
Notes
For added protein, consider adding grilled chicken or chickpeas. This salad keeps well in the fridge for up to 2 days.
