  • 1.5 cups couscous
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 0.5 cup feta cheese crumbled
  • 0.25 cup fresh parsley chopped
  • 0.25 cup olive oil
  • 2 tablespoons lemon juice freshly squeezed
  • 1 teaspoon dried oregano
  • 0.25 teaspoon salt adjust to taste
  • 0.25 teaspoon black pepper freshly ground

Instructions

Preparation Steps

  • Bring 1.5 cups of water to a boil. Remove from heat, stir in couscous, cover and let sit for 10 minutes until water is absorbed.
  • Fluff the couscous with a fork and transfer it to a large mixing bowl to cool.
  • Add the halved cherry tomatoes, diced cucumber, crumbled feta cheese, and chopped parsley to the couscous.
  • In a small bowl, whisk together olive oil, lemon juice, dried oregano, salt, and pepper.
  • Pour the dressing over the couscous mixture and toss gently to combine all ingredients.
  • Serve chilled or at room temperature.

Notes

For added protein, consider adding grilled chicken or chickpeas. This salad keeps well in the fridge for up to 2 days.
