In a large bowl, mix ground pork, shredded cabbage, soy sauce, and grated ginger until well combined.
Place about one tablespoon of filling in the center of each potsticker wrapper. Moisten edges with water, fold, and press to seal.
Heat vegetable oil in a non-stick skillet over medium heat. Place potstickers flat side down and cook until bottoms are golden brown, about 3-4 minutes.
Add 1/4 cup water to the skillet, cover immediately, and steam potstickers for 8-10 minutes until filling is cooked through and wrappers are tender.
Remove cover and cook for another 1-2 minutes to re-crisp the bottoms before serving.
Notes
Serve potstickers with soy sauce or chili oil for dipping. Store leftovers in an airtight container for up to 2 days.
