  • 4 medium zucchini
  • 1 lb ground chicken lean
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 0.5 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 0.5 teaspoon dried Italian seasoning
  • 2 tablespoons olive oil
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper

Instructions

Preparation Steps

  • Preheat oven to 375°F (190°C). Slice zucchinis in half lengthwise and scoop out the center to create boats.
  • Heat olive oil in a skillet over medium heat. Add ground chicken, garlic powder, Italian seasoning, salt, and pepper. Cook until chicken is fully cooked and browned, about 7-8 minutes.
  • Spoon marinara sauce into the zucchini boats, then add the cooked chicken mixture on top.
  • Sprinkle shredded mozzarella and grated Parmesan cheese evenly over each zucchini boat.
  • Place zucchini boats on a baking sheet and bake in the preheated oven for 20-25 minutes until cheese is melted and bubbly.
  • Remove from oven and let cool for a few minutes before serving.
