This delicious Chicken Parmesan Zucchini Boats recipe is a low-carb, flavorful meal perfect for dinner. Tender chicken topped with marinara sauce and melted cheese served in zucchini halves.
Preheat oven to 375°F (190°C). Slice zucchinis in half lengthwise and scoop out the center to create boats.
Heat olive oil in a skillet over medium heat. Add ground chicken, garlic powder, Italian seasoning, salt, and pepper. Cook until chicken is fully cooked and browned, about 7-8 minutes.
