Instructions
Preparation Steps
Preheat the oven to 375°F (190°C).
Heat olive oil in a large skillet over medium heat. Add ground beef and cook until browned, about 5-7 minutes. Drain excess fat.
Stir in taco seasoning and 0.5 cup of water. Simmer until thickened, about 3 minutes.
Mix in cooked rice and black beans. Stir until combined and heated through.
Arrange bell pepper halves in a baking dish. Fill each pepper with the beef mixture.
Top with cheese and bake in the preheated oven for 20 minutes, or until peppers are tender and cheese is melted.
Serve warm, topped with salsa and cilantro. Serve with lime wedges.
Notes
Feel free to substitute ground turkey or chicken for the beef for a lighter version. Add some sour cream for extra creaminess.
