  • 4 bell peppers assorted colors, halved and seeded
  • 1 lb ground beef lean
  • 1 pack taco seasoning about 1 oz
  • 1 cup cooked rice white or brown
  • 1 cup canned black beans drained and rinsed
  • 1 cup shredded cheese cheddar or your choice
  • 1 tbsp olive oil
  • 0.5 cup salsa
  • 0.5 cup chopped cilantro optional, for garnish
  • 1 unit lime cut into wedges, for serving

Instructions

Preparation Steps

  • Preheat the oven to 375°F (190°C).
  • Heat olive oil in a large skillet over medium heat. Add ground beef and cook until browned, about 5-7 minutes. Drain excess fat.
  • Stir in taco seasoning and 0.5 cup of water. Simmer until thickened, about 3 minutes.
  • Mix in cooked rice and black beans. Stir until combined and heated through.
  • Arrange bell pepper halves in a baking dish. Fill each pepper with the beef mixture.
  • Top with cheese and bake in the preheated oven for 20 minutes, or until peppers are tender and cheese is melted.
  • Serve warm, topped with salsa and cilantro. Serve with lime wedges.

Notes

Feel free to substitute ground turkey or chicken for the beef for a lighter version. Add some sour cream for extra creaminess.
