  • 1.5 cups mashed sweet potatoes cooked and mashed
  • 1 cup cornmeal
  • 0.5 cup all-purpose flour
  • 2 teaspoons baking powder
  • 0.5 teaspoon salt
  • 0.5 cup milk any kind
  • 1 egg beaten
  • 4 tablespoons butter melted

Instructions

Preparation Steps

  • Preheat your oven to 375°F (190°C).
  • In a large bowl, combine the mashed sweet potatoes, cornmeal, flour, baking powder, and salt.
  • In another bowl, mix the milk, beaten egg, and melted butter.
  • Add the wet ingredients to the dry ingredients and stir until just combined.
  • Pour the batter into a greased 9-inch pie pan.
  • Bake for 30-35 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
  • Let it cool slightly before serving.

Notes

You can add honey or maple syrup for additional sweetness.
