Instructions
Preparation Steps
Preheat your oven to 375°F (190°C).
In a large bowl, combine the mashed sweet potatoes, cornmeal, flour, baking powder, and salt.
In another bowl, mix the milk, beaten egg, and melted butter.
Add the wet ingredients to the dry ingredients and stir until just combined.
Pour the batter into a greased 9-inch pie pan.
Bake for 30-35 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
Let it cool slightly before serving.
Notes
You can add honey or maple syrup for additional sweetness.
