  • 0.5 cup dried cranberries
  • 0.25 cup walnuts toasted and chopped
  • 0.25 cup red onion thinly sliced
  • 2 tbsp olive oil
  • 1 tbsp lemon juice freshly squeezed
  • 1 tsp honey
  • 0.5 tsp salt or to taste
  • 0.25 tsp black pepper freshly ground

Preparation Steps

  • Bring a large pot of salted water to a boil. Add fusilli pasta and cook according to package instructions until al dente. Drain and rinse under cold water.
  • In a large bowl, combine the cooked pasta, fresh spinach, crumbled feta cheese, dried cranberries, toasted walnuts, and red onion.
  • In a small bowl, whisk together olive oil, lemon juice, honey, salt, and black pepper.
  • Drizzle the dressing over the pasta salad and toss gently to combine.
  • Serve immediately or refrigerate for up to 1 hour to blend flavors.

Notes

This salad can be prepared a day in advance. Store in an airtight container in the refrigerator and add the dressing just before serving. Feel free to add grilled chicken for a complete meal.
