Instructions
Preparation Steps
In a large pot, cook the onion and garlic in a bit of oil until soft.
Add the smoked ham hock and chicken broth to the pot, bringing to a boil.
Reduce to a simmer, add the collard greens, and cook until tender, about 45-60 minutes.
Season with salt and black pepper to taste. Serve hot.
Notes
Feel free to adjust the seasoning as desired. Adding a splash of vinegar at the end gives a nice tangy flavor.
