Instructions
Preparation Steps
Preheat your oven to 350°F (175°C).
In a large pot, cook egg noodles according to package directions until al dente. Drain and set aside.
In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, and sauté until softened, about 3 minutes.
Add the ground beef to the skillet, and cook until browned, breaking it apart as it cooks. Drain excess fat.
Add diced tomatoes, salt, and pepper to the beef mixture and simmer for 5 minutes. Remove from heat.
In a large bowl, combine cooked egg noodles, sour cream, cottage cheese, and the beef mixture. Stir to combine.
Transfer the mixture to a 9x13 inch baking dish. Sprinkle shredded cheddar cheese evenly on top.
Bake in the preheated oven for 20 minutes, or until the cheese is melted and bubbling.
Garnish with chopped parsley before serving.
Notes
This casserole can be prepared ahead of time and refrigerated until ready to bake.
