  • 1.5 lbs ground beef lean
  • 12 oz egg noodles uncooked
  • 1 cup sour cream full fat
  • 1 cup cottage cheese
  • 1 cup shredded cheddar cheese sharp
  • 1 cup onion chopped
  • 2 cloves garlic minced
  • 1 can diced tomatoes (14 oz)
  • 1 tsp salt
  • 1 tsp black pepper ground
  • 1 tbsp olive oil
  • 2 tbsp parsley chopped, for garnish

Instructions

Preparation Steps

  • Preheat your oven to 350°F (175°C).
  • In a large pot, cook egg noodles according to package directions until al dente. Drain and set aside.
  • In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, and sauté until softened, about 3 minutes.
  • Add the ground beef to the skillet, and cook until browned, breaking it apart as it cooks. Drain excess fat.
  • Add diced tomatoes, salt, and pepper to the beef mixture and simmer for 5 minutes. Remove from heat.
  • In a large bowl, combine cooked egg noodles, sour cream, cottage cheese, and the beef mixture. Stir to combine.
  • Transfer the mixture to a 9x13 inch baking dish. Sprinkle shredded cheddar cheese evenly on top.
  • Bake in the preheated oven for 20 minutes, or until the cheese is melted and bubbling.
  • Garnish with chopped parsley before serving.

Notes

This casserole can be prepared ahead of time and refrigerated until ready to bake.
