  • 4 large Russet potatoes scrubbed clean
  • 2 tablespoons olive oil extra virgin
  • 1 teaspoon salt kosher
  • 1 cup sour cream
  • 0.25 cup chives finely chopped
  • 0.5 teaspoon black pepper freshly ground
  • 0.5 cup shredded cheddar cheese
  • 2 tablespoons butter unsalted, softened

Instructions

Preparation Steps

  • Preheat your oven to 400°F (200°C).
  • Pierce the potatoes several times with a fork. Rub with olive oil and sprinkle with kosher salt. Place on a baking sheet.
  • Bake in the preheated oven for about 60 minutes, or until potatoes are tender and skins are slightly crisp.
  • Remove potatoes from the oven and let them cool slightly. Make a slit on the top of each potato and gently squeeze from both ends to push out the flesh slightly.
  • Top each potato with butter, a dollop of sour cream, a sprinkle of cheddar cheese, chopped chives, and freshly ground black pepper.
