These S'mores Cheesecake Delights combine creamy cheesecake with the classic campfire flavors of graham crackers, chocolate, and toasted marshmallows for a perfect treat.
Preheat oven to 325°F (163°C). In a medium bowl, mix graham cracker crumbs and melted butter. Press mixture firmly into the bottom of a 9-inch springform pan to form the crust.
In a large bowl, beat softened cream cheese with a mixer until smooth. Add sugar and continue mixing until well combined.
Add eggs one at a time, beating just until incorporated. Mix in vanilla extract.
Fold in half of the mini marshmallows and chocolate chips into the batter.
Pour batter over the crust in the springform pan. Sprinkle remaining marshmallows and chocolate chips on top.
Bake for 45 minutes or until edges are set and center is slightly jiggly. Cool completely before removing the pan rim.
Optional: Broil the cheesecake for 1-2 minutes to toast marshmallows on top until golden brown. Serve chilled.
