  • 1.5 pounds ground beef lean
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 28 oz canned crushed tomatoes
  • 4 cups beef broth low sodium
  • 1 tbsp tomato paste
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1 tsp salt to taste
  • 0.5 tsp black pepper freshly ground
  • 10 oz fresh tortellini cheese-filled
  • 0.5 cup heavy cream
  • 0.5 cup grated Parmesan cheese plus more for serving
  • 2 tbsp fresh parsley chopped

Instructions

Preparation Steps

  • In a large skillet, brown the ground beef over medium heat until fully cooked. Drain excess fat.
  • Add onion and garlic to the skillet and sauté until the onion becomes translucent.
  • Transfer the cooked beef, onion, and garlic to a slow cooker.
  • Add crushed tomatoes, beef broth, tomato paste, dried basil, oregano, salt, and pepper.
  • Cover and cook on low for 4 hours.
  • Thirty minutes before serving, stir in the tortellini, heavy cream, and Parmesan cheese.
  • Cook on high for another 30 minutes or until the tortellini is tender.
  • Garnish with fresh parsley and serve warm with additional Parmesan cheese.

Notes

For a lighter version, substitute half-and-half for the heavy cream.
