Instructions
Preparation Steps
In a large skillet, brown the ground beef over medium heat until fully cooked. Drain excess fat.
Add onion and garlic to the skillet and sauté until the onion becomes translucent.
Transfer the cooked beef, onion, and garlic to a slow cooker.
Add crushed tomatoes, beef broth, tomato paste, dried basil, oregano, salt, and pepper.
Cover and cook on low for 4 hours.
Thirty minutes before serving, stir in the tortellini, heavy cream, and Parmesan cheese.
Cook on high for another 30 minutes or until the tortellini is tender.
Garnish with fresh parsley and serve warm with additional Parmesan cheese.
Notes
For a lighter version, substitute half-and-half for the heavy cream.
