  • 1.5 lb ground chicken
  • 0.5 cup breadcrumbs use gluten-free if preferred
  • 0.25 cup onion, finely chopped
  • 2 cloves garlic, minced
  • 0.5 tsp ground cumin
  • 0.5 tsp ground coriander
  • 0.25 tsp cayenne pepper optional, adjust to taste
  • 1 tbsp fresh parsley, chopped
  • 1 large egg lightly beaten
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 2 tbsp olive oil for frying

Instructions

Preparation Steps

  • In a large bowl, combine ground chicken, breadcrumbs, onion, garlic, cumin, coriander, cayenne pepper, parsley, egg, salt, and black pepper. Mix well until all ingredients are evenly incorporated.
  • Shape the mixture into 16 small meatballs, about 1 inch in diameter.
  • Heat olive oil in a large skillet over medium heat. Add meatballs and cook for 8-10 minutes, turning occasionally, until golden brown and cooked through.
  • Remove meatballs from skillet and drain on paper towels. Serve warm with your favorite dipping sauce or side.

Notes

These chicken kofta meatballs can be served over rice or in pita bread for a delicious Mediterranean-inspired meal.
