  • 1.5 lb boneless skinless chicken breast
  • 2 cup long grain white rice cooked
  • 1 cup broccoli florets
  • 1 cup thinly sliced carrots
  • 1 cup red bell pepper, sliced
  • 3 tbsp soy sauce low sodium
  • 2 tbsp vegetable oil
  • 1 tbsp grated fresh ginger
  • 2 clove garlic minced
  • 1 tsp cornstarch optional, for thickening

Instructions

Preparation Steps

  • Cook rice according to package instructions and set aside.
  • Cut chicken into bite-sized pieces and season lightly with salt and pepper.

  • Heat 1 tablespoon vegetable oil in a large skillet over medium-high heat. Add chicken and stir-fry until cooked through, about 5-6 minutes. Remove from skillet and set aside.

  • In the same skillet, heat remaining oil. Add garlic and ginger; sauté for 30 seconds until fragrant.
