  • 2 cups Cooked white rice
  • 1.5 pounds Boneless skinless chicken breasts diced
  • 3 cups Fresh broccoli florets
  • 2 cups Shredded cheddar cheese divided
  • 1 cup Cream of chicken soup
  • 0.5 cup Sour cream
  • 0.5 cup Milk
  • 1 teaspoon Garlic powder
  • 0.5 teaspoon Onion powder
  • 0.25 teaspoon Black pepper freshly ground
  • 0.5 teaspoon Salt

Instructions

Preparation Steps

  • Preheat oven to 350°F (175°C). Lightly grease a 9x13 inch baking dish.
  • In a large bowl, combine cooked rice, diced chicken, broccoli florets, 1 cup of shredded cheddar cheese, cream of chicken soup, sour cream, milk, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  • Spread the mixture evenly into the prepared baking dish.
  • Sprinkle the remaining 1 cup of shredded cheddar cheese evenly over the top.
  • Bake uncovered for 35-40 minutes or until the casserole is bubbly and the cheese is melted and golden.
  • Remove from oven and let cool slightly before serving.

Notes

For extra flavor, sprinkle some paprika on top before baking. Leftovers taste great reheated.
