Instructions
Preparation Steps
Heat olive oil over medium heat in a large pot. Add sausage and cook until browned, about 5 minutes.
Add onions and garlic to the pot. Sauté until onions are translucent, about 3 minutes.
Stir in paprika, thyme, salt, and black pepper. Cook for 1 more minute.
Add potatoes, tomatoes with juice, and chicken broth to the pot. Bring to a boil, then reduce heat to simmer.
Cover and cook for 20 minutes or until potatoes are tender.
Add shrimp to the pot and cook for an additional 5 minutes, or until shrimp are pink and cooked through.
Serve hot, garnished with chopped parsley.
Notes
This stew can be prepared ahead and tastes even better the next day as the flavors meld together. Adjust seasonings to taste when reheating.
