Preheat your oven to 350°F (175°C) and line a cupcake pan with liners.
In a medium bowl, whisk together the all-purpose flour, baking powder, and salt. Set aside.
In a large bowl, beat the butter and sugar together until light and fluffy.
Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.
Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined.
Stir in peppermint extract and green food coloring until the desired shade is reached.
Divide the batter evenly among the cupcake liners.
Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean. Let cool completely before frosting.

For extra minty flavor, consider adding a hint of mint frosting or top with a sprig of fresh mint as a garnish.
