  • 1.5 cups long-grain white rice uncooked
  • 1 pound ground beef or pork sausage
  • 1 cup chopped onion
  • 0.5 cup chopped green bell pepper
  • 0.5 cup chopped celery
  • 2 cloves garlic minced
  • 4 cups chicken broth
  • 1 tablespoon Cajun seasoning

Instructions

Preparation Steps

  • Rinse the rice in cold water until the water runs clear. Set aside.
  • Heat a large skillet over medium heat. Add ground beef, onion, bell pepper, and celery, and cook until the beef is browned and vegetables are tender.
  • Add garlic and Cajun seasoning, and cook for an additional minute.
  • Stir in the rice and chicken broth. Bring to a simmer, cover, and reduce heat to low. Cook for about 18-20 minutes, or until the rice is tender and liquid is absorbed.
  • Fluff the rice with a fork, and serve hot.

Notes

For extra heat, add a pinch of cayenne pepper.
