Instructions
Preparation Steps
Preheat your oven to 350°F (175°C).
Season the chuck roast with salt and pepper on all sides.
In a large Dutch oven, heat olive oil over medium-high heat. Sear the roast on all sides until browned.
Remove the roast and set aside. In the same pot, add onions, carrots, and celery. Cook until the onions are translucent.
Add garlic and tomato paste, cooking for another 2 minutes.
Deglaze the pan with red wine, if using, then add beef broth, thyme, and rosemary. Stir to combine.
Return the roast to the pot. Cover and transfer to the preheated oven for 3 to 4 hours, or until the meat is tender.
Notes
For best results, allow the roast to rest for 15 minutes before serving. Pair with mashed potatoes or crusty bread.
