  • 3 pounds chuck roast trimmed of excess fat
  • 2 tablespoons olive oil extra virgin
  • 1 teaspoon salt
  • 1 teaspoon black pepper freshly ground
  • 1 cup beef broth low sodium
  • 4 cloves garlic minced
  • 2 tablespoons tomato paste
  • 1 teaspoon thyme dried
  • 1 teaspoon rosemary dried
  • 3 carrots carrots peeled and sliced
  • 1 large onion chopped
  • 3 stalks celery chopped
  • 1 cup red wine optional

Instructions

Preparation Steps

  • Preheat your oven to 350°F (175°C).
  • Season the chuck roast with salt and pepper on all sides.
  • In a large Dutch oven, heat olive oil over medium-high heat. Sear the roast on all sides until browned.
  • Remove the roast and set aside. In the same pot, add onions, carrots, and celery. Cook until the onions are translucent.
  • Add garlic and tomato paste, cooking for another 2 minutes.
  • Deglaze the pan with red wine, if using, then add beef broth, thyme, and rosemary. Stir to combine.
  • Return the roast to the pot. Cover and transfer to the preheated oven for 3 to 4 hours, or until the meat is tender.

Notes

For best results, allow the roast to rest for 15 minutes before serving. Pair with mashed potatoes or crusty bread.
