In a skillet, cook the sausage over medium heat until browned and cooked through. Remove sausage from skillet and set aside, leaving the drippings in the pan.
Add the flour to the skillet and cook for about 1 minute, stirring constantly. Gradually whisk in the milk. Cook, stirring often, until the gravy thickens. Season with salt and pepper.
Roll out the pizza dough on a parchment-lined baking sheet. Pour the sausage gravy evenly over the dough.
In a separate skillet, scramble the eggs until just set. Distribute the scrambled eggs over the gravy, then sprinkle with cheese.
Bake for 15-20 minutes or until the crust is golden and the cheese is bubbly.
Top with sliced green onions before serving.
Notes
This breakfast pizza is best enjoyed hot out of the oven. Customize with your choice of shredded cheese or additional toppings like bacon and mushrooms.
