  • 1.5 lb ground beef preferably lean
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 can diced tomatoes 14 oz
  • 1 can cream of mushroom soup 10.5 oz
  • 1 cup frozen mixed vegetables thawed
  • 2 cups shredded cheese cheddar or your choice
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp paprika
  • 1 package egg noodles 12 oz

Instructions

Preparation Steps

  • Preheat your oven to 350°F (175°C).
  • In a large skillet, cook the ground beef over medium heat until browned. Drain excess fat.
  • Add chopped onion and minced garlic to the beef. Cook until the onion is translucent.
  • Stir in the diced tomatoes, cream of mushroom soup, frozen mixed vegetables, salt, pepper, and paprika. Simmer for 5 minutes.
  • Cook egg noodles according to package instructions; drain.
  • In a greased 9x13 inch baking dish, layer half of the cooked noodles, followed by half of the beef mixture, then half of the cheese. Repeat the layers.
  • Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbling.
  • Let cool slightly before serving.

Notes

Feel free to customize the vegetables or cheese according to your preference. This casserole can also be prepared a day in advance and baked right before serving.
