  • 4 medium zucchini sliced into 1-inch thick pieces
  • 2 tablespoons olive oil extra virgin
  • 4 cloves garlic minced
  • 1 cup mozzarella cheese shredded
  • 0.25 cup parmesan cheese grated
  • 1 teaspoon dried oregano
  • 0.5 teaspoon salt or to taste
  • 0.5 teaspoon black pepper freshly ground
  • 2 tablespoons fresh parsley finely chopped, for garnish

Instructions

Preparation Steps

  • Preheat your grill to medium-high heat.
  • Brush the zucchini slices with olive oil on both sides and season with salt and pepper.
  • Grill the zucchini slices for 3-4 minutes on each side until they are tender and have nice grill marks.
  • In a small bowl, mix the minced garlic, mozzarella, parmesan, and oregano together.
  • Top each grilled zucchini slice with the cheese mixture.
  • Return the zucchini steaks to the grill and close the lid. Cook for another 2-3 minutes until the cheese is melted and bubbly.
  • Remove from the grill and sprinkle with chopped parsley before serving.
