  • 1.5 lbs broccoli Cut into florets
  • 1 lb carrots Peeled and sliced
  • 3 tbsp olive oil Extra virgin
  • 1 tsp salt To taste
  • 0.5 tsp black pepper Freshly ground
  • 1 tsp garlic powder
  • 1 tsp dried thyme
  • 0.5 tsp dried oregano

Instructions

Preparation Steps

  • Preheat the oven to 425°F (220°C).
  • In a large bowl, combine broccoli florets and sliced carrots.
  • Drizzle olive oil over the vegetables and toss to coat evenly.
  • Sprinkle salt, black pepper, garlic powder, thyme, and oregano over the vegetables, and toss again.
  • Spread the vegetables in a single layer on a baking sheet.
  • Roast in the preheated oven for 20-25 minutes, until the vegetables are tender and slightly browned.

Notes

For added flavor, consider garnishing with freshly grated Parmesan cheese right before serving.
