  • In a large bowl, combine strawberries and sugar. Let sit for 10 minutes, stirring occasionally to allow the strawberries to release their juices.
  • Transfer the strawberry mixture to a heavy-bottomed saucepan. Add the lemon juice and lemon zest if using.
  • Cook over medium heat, stirring constantly, until the mixture reaches a boil. Reduce heat and simmer for 20 minutes or until thickened, stirring occasionally.
  • Remove from heat and let cool. Pour the jam into sterilized jars and seal tightly.

Notes

Store the jam in the refrigerator for up to two weeks. For long-term storage, process in a hot water bath and keep in a cool, dark place.
