  • 1.5 cups orzo pasta
  • 1 pound boneless skinless chicken breasts cut into bite-size pieces
  • 2 tbsp olive oil
  • 1 cup chicken broth low sodium
  • 1 cup cherry tomatoes halved
  • 0.5 cup grated Parmesan cheese plus extra for garnish
  • 2 cloves garlic minced
  • 0.25 cup fresh parsley chopped
  • 0.5 tsp salt
  • 0.25 tsp black pepper freshly ground

Instructions

Preparation Steps

  • Heat olive oil in a large skillet over medium heat.
  • Add chicken pieces and cook until browned and cooked through, about 6-8 minutes. Remove chicken and set aside.
  • In the same skillet, add garlic and cook for 1 minute until fragrant.
  • Add orzo pasta and toast lightly for 2 minutes, stirring frequently.
  • Pour in chicken broth, stir, and bring to a simmer. Cover and cook for 10 minutes until orzo is tender.
  • Stir in cooked chicken, cherry tomatoes, Parmesan cheese, salt, and pepper. Cook for another 2-3 minutes until heated through.
  • Remove from heat, garnish with parsley, and serve warm.

Notes

For a creamier texture, add 1/4 cup of heavy cream before serving.
