Instructions
Preparation Steps
Heat olive oil in a large skillet over medium heat.
Add chicken pieces and cook until browned and cooked through, about 6-8 minutes. Remove chicken and set aside.
In the same skillet, add garlic and cook for 1 minute until fragrant.
Add orzo pasta and toast lightly for 2 minutes, stirring frequently.
Pour in chicken broth, stir, and bring to a simmer. Cover and cook for 10 minutes until orzo is tender.
Stir in cooked chicken, cherry tomatoes, Parmesan cheese, salt, and pepper. Cook for another 2-3 minutes until heated through.
Remove from heat, garnish with parsley, and serve warm.
Notes
For a creamier texture, add 1/4 cup of heavy cream before serving.
