  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 0.25 tsp salt
  • 0.5 cup unsalted butter softened
  • 1 cup granulated sugar
  • 2 large eggs room temperature
  • 1 tsp vanilla extract
  • 1 cup crushed pineapple drained
  • 0.5 cup walnuts chopped
  • 0.25 cup milk

Instructions

Preparation Steps

  • Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  • In a bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  • In a separate bowl, beat the softened butter and sugar until light and fluffy.
  • Add eggs, one at a time, beating well after each addition. Mix in vanilla extract.
  • Gradually add the dry ingredients to the wet ingredients, alternating with milk, starting and ending with the dry ingredients.
  • Gently fold in the crushed pineapple and chopped walnuts.
  • Pour the batter into the prepared cake pan and smooth the top with a spatula.
  • Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before serving.

This cake pairs well with a dollop of whipped cream or a scoop of vanilla ice cream.
