  • 1 box yellow cake mix 15.25 oz
  • 3 large eggs
  • 1 cup unsweetened applesauce
  • 1 can crushed pineapple 20 oz, with juice
  • 1 cup mandarin oranges drained
  • 1 container whipped topping 8 oz
  • 1 package instant vanilla pudding mix 3.4 oz

Instructions

Preparation Steps

  • Preheat oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
  • In a large bowl, combine the cake mix, eggs, and applesauce. Beat with an electric mixer on medium speed for 2 minutes.
  • Stir in the crushed pineapple with juice and the mandarin oranges until well combined.
  • Pour the batter into the prepared baking pan and spread evenly.
  • Bake for 30 minutes or until a toothpick inserted into the center comes out clean. Cool completely.
  • In a medium bowl, fold the whipped topping into the instant pudding mix.
  • Spread the topping mixture evenly over the cooled cake.

Notes

This cake is even better when chilled before serving, allowing the flavors to meld together.
