  • 3 cups pineapple chunks fresh, cut into small pieces
  • 3 cups sugar
  • 0.5 cup apple cider vinegar
  • 0.5 teaspoon turmeric powder
  • 0.5 teaspoon celery seed
  • 3 cloves garlic minced
  • 2 teaspoons mustard seeds
  • 0.5 teaspoon crushed red pepper flakes adjust for spiciness
  • 0.25 teaspoon cayenne pepper optional, for added heat

Instructions

Preparation Steps

  • In a large pot, combine sugar, apple cider vinegar, turmeric powder, celery seed, minced garlic, mustard seeds, crushed red pepper flakes, and cayenne pepper. Stir well to combine.
  • Add the pineapple chunks to the pot and bring the mixture to a boil over medium-high heat.
  • Reduce the heat and simmer for about 45 minutes, stirring occasionally, until the mixture thickens and the pineapple becomes translucent.
  • Remove from heat and let cool slightly before transferring the mixture to sterilized jars.
  • Seal the jars and store in the refrigerator for up to 2 weeks.

Notes

Feel free to adjust the level of spice by adding more or less red pepper flakes and cayenne.
