Preparation Steps
In a large pot, combine sugar, apple cider vinegar, turmeric powder, celery seed, minced garlic, mustard seeds, crushed red pepper flakes, and cayenne pepper. Stir well to combine.
Add the pineapple chunks to the pot and bring the mixture to a boil over medium-high heat.
Reduce the heat and simmer for about 45 minutes, stirring occasionally, until the mixture thickens and the pineapple becomes translucent.
Remove from heat and let cool slightly before transferring the mixture to sterilized jars.
Seal the jars and store in the refrigerator for up to 2 weeks.
Notes
Feel free to adjust the level of spice by adding more or less red pepper flakes and cayenne.
