  • 2.5 cups all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt
  • 1.5 cups chopped pecans toasted
  • 0.5 cup corn syrup light
  • 2 tablespoons heavy cream

Preparation Steps

  • Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.
  • In a large bowl, cream together butter and brown sugar until light and fluffy.
  • Beat in eggs, one at a time, then stir in vanilla.
  • Combine flour, baking powder, and salt in a separate bowl. Gradually add to the creamed mixture.
  • Fold in pecans.
  • Drop dough by rounded tablespoons onto prepared baking sheets.
  • In a small saucepan, combine corn syrup and heavy cream. Heat gently until smooth.
  • Press a small indentation in each cookie and fill with corn syrup mixture.
  • Bake for 12-15 minutes until golden. Cool on wire racks.

Notes

For an extra touch, sprinkle with additional toasted pecans before serving.
