Instructions
Preparation Steps
Preheat your oven to 350°F (175°C) and lightly grease a muffin tin.
In a bowl, whisk together the flour, baking soda, and salt. Set aside.
In a separate large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
Beat in the egg and vanilla extract until combined.
Gradually add the dry ingredients to the wet mixture, mixing until just combined.
Stir in the chocolate chips.
Spoon about a tablespoon of dough into each muffin cup, then place a peanut butter cup in the center of each.
Cover the peanut butter cups with another tablespoon of dough.
Bake for 12-15 minutes, or until golden brown. Cool before serving.
