  • 0.5 cup unsalted butter softened
  • 0.5 cup granulated sugar
  • 0.5 cup brown sugar packed
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 cup semi-sweet chocolate chips
  • 12 peanut butter cups individually wrapped

Instructions

Preparation Steps

  • Preheat your oven to 350°F (175°C) and lightly grease a muffin tin.
  • In a bowl, whisk together the flour, baking soda, and salt. Set aside.
  • In a separate large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  • Beat in the egg and vanilla extract until combined.
  • Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  • Stir in the chocolate chips.
  • Spoon about a tablespoon of dough into each muffin cup, then place a peanut butter cup in the center of each.
  • Cover the peanut butter cups with another tablespoon of dough.
  • Bake for 12-15 minutes, or until golden brown. Cool before serving.
