  • 1.5 cups granulated sugar
  • 1 tbsp baking powder
  • 0.5 tsp salt
  • 0.5 cups unsalted butter softened
  • 3 large eggs
  • 1 tsp vanilla extract
  • 0.75 cup milk
  • 1.5 cups peeled and sliced peaches fresh or canned
  • 1 cup coconut flakes
  • 1 cup powdered sugar
  • 0.25 cup heavy cream

Instructions

Preparation Steps

  • Preheat oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
  • In a large bowl, mix flour, sugar, baking powder, and salt.
  • Add softened butter, eggs, vanilla, and milk to the dry ingredients and beat until smooth.
  • Gently fold in the sliced peaches.
  • Pour the mixture into the prepared pan and bake in the preheated oven for 35-40 minutes or until a toothpick inserted into the center comes out clean.
  • In a separate bowl, mix the powdered sugar, heavy cream, and coconut flakes to create the frosting.
  • Allow the cake to cool before spreading the coconut frosting over the top.
