  • 1.5 cups Graham cracker crumbs finely crushed
  • 0.5 cup Melted butter
  • 1 cup Granulated sugar divided
  • 1 cup Boiling water
  • 1 package Lemon Jell-O 3 oz
  • 8 oz Cream cheese softened
  • 1 teaspoon Vanilla extract
  • 1 can Evaporated milk chilled
  • 1 tablespoon Lemon juice fresh

Instructions

Preparation Steps

  • Mix graham cracker crumbs with melted butter and 1/4 cup of sugar. Press the mixture into the bottom of a 9x13 inch pan to form the crust.
  • Dissolve Lemon Jell-O in boiling water. Let it cool to room temperature.
  • Beat cream cheese, remaining sugar, and vanilla extract until smooth and fluffy.
  • In a separate bowl, whip chilled evaporated milk until fluffy. Gradually add cooled Jell-O and continue whipping.
  • Fold whipped Jell-O mixture into the cream cheese mixture. Stir in lemon juice.
  • Spread the filling over the crust, cover, and refrigerate for at least 2 hours or until set.

Notes

Garnish with lemon slices and mint leaves for an extra touch of freshness.
