Preparation Steps
Mix graham cracker crumbs with melted butter and 1/4 cup of sugar. Press the mixture into the bottom of a 9x13 inch pan to form the crust.
Dissolve Lemon Jell-O in boiling water. Let it cool to room temperature.
Beat cream cheese, remaining sugar, and vanilla extract until smooth and fluffy.
In a separate bowl, whip chilled evaporated milk until fluffy. Gradually add cooled Jell-O and continue whipping.
Fold whipped Jell-O mixture into the cream cheese mixture. Stir in lemon juice.
Spread the filling over the crust, cover, and refrigerate for at least 2 hours or until set.
Notes
Garnish with lemon slices and mint leaves for an extra touch of freshness.
