  • 1 cup butter melted
  • 2 cup granulated sugar
  • 4 large eggs
  • 1.5 tsp vanilla extract
  • 1 cup all-purpose flour
  • 0.5 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 0.5 tsp salt
  • 1 bag mini marshmallows approximately 10 oz
  • 0.5 cup butter for frosting
  • 0.25 cup milk for frosting
  • 0.25 cup unsweetened cocoa powder for frosting
  • 3 cup powdered sugar for frosting
  • 1 tsp vanilla extract for frosting

Instructions

Preparation Steps

  • Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking pan.
  • In a large bowl, mix together melted butter, granulated sugar, eggs, and vanilla extract until well combined.
  • In a separate bowl, whisk together flour, cocoa powder, baking powder, and salt. Gradually add to the wet ingredients, stirring until just combined.
  • Pour the batter into the prepared baking pan and spread evenly.
  • Bake in preheated oven for 25-30 minutes or until the top is set and a toothpick inserted into the center comes out clean.
  • Remove from oven and immediately cover the top with mini marshmallows. Return to the oven for 2-3 minutes, just until the marshmallows begin to puff.
  • In a saucepan over medium heat, combine butter, milk, and cocoa powder for the frosting. Stir until smooth, then gradually whisk in powdered sugar until fully incorporated. Stir in vanilla extract.
  • Pour the warm frosting over the marshmallow layer and spread evenly with a spatula.
  • Allow the brownies to cool completely in the pan before cutting into squares and serving.

Notes

These brownies are best served the day they are made. Store leftovers in an airtight container at room temperature for up to 2 days.
