  • 1 cup cream cheese, softened
  • 0.5 cup granulated sugar
  • 1 egg large egg
  • 1 teaspoon vanilla extract
  • 10 ounces pie crust dough store-bought or homemade
  • 1 cup cherry pie filling

Instructions

Preparation Steps

  • Preheat oven to 350°F (175°C).
  • In a bowl, beat the softened cream cheese until smooth.
  • Add the sugar, egg, and vanilla extract to the cream cheese and mix until creamy.
  • Roll out the pie crust dough and cut into small circles fitting your mini muffin tin.
  • Place the dough circles into the mini muffin tin, gently pressing to form small cups.
  • Fill each cup with a spoonful of the cream cheese mixture, then add a teaspoon of cherry pie filling on top.
  • Bake for 25 minutes or until the crust is golden and the filling is set.
  • Cool for 10 minutes before removing from the tin. Serve warm or chilled.

Notes

These pies can be stored in the refrigerator for up to 3 days. For a festive touch, dust with powdered sugar before serving.
