  • 8 oz spaghetti uncooked
  • 1.5 lbs chicken breast boneless, skinless
  • 1 tbsp olive oil
  • 1 cup onion diced
  • 2 cloves garlic minced
  • 1 cup red bell pepper diced
  • 1 tbsp jalapeño diced
  • 1.5 cups tomato sauce
  • 1 cup chicken broth
  • 1 tsp cumin
  • 0.5 tsp chili powder
  • 0.5 tsp salt to taste
  • 0.5 tsp black pepper to taste
  • 1 cup cheddar cheese shredded
  • 0.25 cup cilantro chopped

Instructions

Preparation Steps

  • Cook the spaghetti according to the package instructions. Drain and set aside.
  • In a large skillet, heat olive oil over medium heat. Add chicken and cook until browned and cooked through.
  • Remove chicken from skillet and set aside. In the same skillet, add the onion, garlic, bell pepper, and jalapeño. Cook until vegetables are soft.
  • Return chicken to the skillet. Stir in the tomato sauce, chicken broth, cumin, chili powder, salt, and pepper. Bring to a simmer.
  • Add cooked spaghetti to the skillet and toss to combine. Cook for 2-3 minutes until heated through.
  • Sprinkle the dish with cheddar cheese and cilantro before serving.

Notes

Feel free to adjust the level of spiciness by adding more or less jalapeño.
