  • 4 large whole wheat tortillas
  • 1 cup hummus store-bought or homemade
  • 1 cup cucumber, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 0.5 cup red onion, thinly sliced
  • 1 cup baby spinach leaves washed and dried
  • 0.25 cup feta cheese, crumbled optional
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp extra virgin olive oil
  • 0.5 tsp dried oregano
  • salt and black pepper to taste

Instructions

Preparation Steps

  • Lay the whole wheat tortillas flat on a clean surface.
  • Spread about 1/4 cup of hummus evenly over each tortilla, leaving a small border around the edges.
  • Layer the sliced cucumbers, cherry tomatoes, red onions, and baby spinach leaves over the hummus.
  • Sprinkle crumbled feta cheese and chopped parsley over the veggies.
  • Drizzle each wrap with olive oil and a sprinkle of dried oregano, salt, and black pepper.
  • Roll up each tortilla tightly, slice in half if desired, and serve immediately or wrap tightly for later.

Notes

These wraps are best enjoyed fresh but can be refrigerated for up to 24 hours. For added protein, try adding grilled chicken or chickpeas.
