  • 1 cup cherry tomatoes halved
  • 0.5 cup cucumber diced
  • 0.25 cup red onion finely chopped
  • 0.25 cup feta cheese crumbled
  • 0.25 cup fresh parsley chopped

Instructions

Preparation Steps

  • Bring the water to a boil and stir in the couscous. Remove from heat and let it sit covered for 5 minutes.
  • Fluff the couscous with a fork and transfer to a large bowl. Stir in olive oil.
  • Add cherry tomatoes, cucumber, red onion, feta cheese, and parsley. Toss gently to combine.

Notes

You can add some lemon juice and black pepper for extra flavor.
