Instructions
Preparation Steps
Preheat the oven to 400°F (200°C).
Place the potato slices on a baking sheet lined with parchment paper.
Brush both sides of the potato slices with olive oil and season with salt and pepper.
Bake in the preheated oven for 25 minutes, flipping halfway through, until golden and tender.
Remove from oven and top each slice with cheddar cheese and bacon bits.
Return to oven and bake for an additional 5-7 minutes, until the cheese is melted.
Serve warm, topped with sour cream and green onions.
Notes
These potato rounds are best served fresh. Adjust seasoning as preferred and feel free to add other toppings like jalapenos for an extra kick.
