Instructions
Preparation Steps
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
In a large bowl, cream together the softened butter and granulated sugar until light and fluffy, about 2 minutes.
Add in the egg and vanilla extract, mixing until well combined.
Stir in the lemon juice and lemon zest.
Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
Using a tablespoon or cookie scoop, form the dough into balls. Roll each ball in powdered sugar to coat.
Place the cookies on the prepared baking sheet about 2 inches apart.
Bake for 10-12 minutes, or until the edges begin to set, but the centers are still soft.
Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
