Preparation Steps

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  • In a large bowl, cream together the softened butter and granulated sugar until light and fluffy, about 2 minutes.
  • Add in the egg and vanilla extract, mixing until well combined.
  • Stir in the lemon juice and lemon zest.
  • Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
  • Using a tablespoon or cookie scoop, form the dough into balls. Roll each ball in powdered sugar to coat.
  • Place the cookies on the prepared baking sheet about 2 inches apart.
  • Bake for 10-12 minutes, or until the edges begin to set, but the centers are still soft.
  • Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
