  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt
  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 2 tablespoons lemon juice freshly squeezed
  • 2 teaspoons lemon zest freshly grated
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar for glaze
  • 2 tablespoons lemon juice for glaze

Instructions

Preparation Steps

  • Preheat the oven to 350°F (175°C) and lightly grease a mini muffin pan.
  • In a bowl, mix the flour, baking soda, and salt. Set aside.
  • In a separate bowl, beat the butter and granulated sugar until light and fluffy.
  • Add the eggs, one at a time, beating well after each addition.
  • Stir in the lemon juice, lemon zest, and vanilla extract.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Spoon the batter into the prepared mini muffin pan, filling each cup halfway.
  • Bake for 10-12 minutes or until a toothpick inserted into a blossom comes out clean.
  • While the blossoms are baking, prepare the glaze by mixing powdered sugar and lemon juice until smooth.
  • Drizzle the glaze over the warm lemon blossoms and let cool before serving.

Notes

For a more intense lemon flavor, increase the lemon zest by an additional teaspoon.
