Instructions
Preparation Steps
Preheat the oven to 350°F (175°C) and lightly grease a mini muffin pan.
In a bowl, mix the flour, baking soda, and salt. Set aside.
In a separate bowl, beat the butter and granulated sugar until light and fluffy.
Add the eggs, one at a time, beating well after each addition.
Stir in the lemon juice, lemon zest, and vanilla extract.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Spoon the batter into the prepared mini muffin pan, filling each cup halfway.
Bake for 10-12 minutes or until a toothpick inserted into a blossom comes out clean.
While the blossoms are baking, prepare the glaze by mixing powdered sugar and lemon juice until smooth.
Drizzle the glaze over the warm lemon blossoms and let cool before serving.
Notes
For a more intense lemon flavor, increase the lemon zest by an additional teaspoon.
