  • 1.5 cups graham cracker crumbs
  • 0.25 cups unsalted butter, melted
  • 24 oz cream cheese, softened
  • 0.75 cups granulated sugar
  • 3 large eggs
  • 0.3 cups honey preferably lavender honey
  • 2 tsp dried culinary lavender buds
  • 1 tsp vanilla extract
  • 0.5 cups sour cream

Instructions

Preparation Steps

  • Preheat the oven to 325°F (163°C). Grease a 9-inch springform pan.
  • Combine graham cracker crumbs and melted butter. Press mixture into the bottom of the springform pan to create the crust.
  • In a large bowl, beat the cream cheese and sugar until smooth and creamy.
  • Add in eggs one at a time, beating well after each addition.
  • Mix in the honey, dried lavender buds, vanilla extract, and sour cream until just combined.
  • Pour the batter over the crust and smooth the top.
  • Bake for 60 minutes or until center is set but still slightly jiggly.
  • Allow cheesecake to cool to room temperature, then refrigerate for at least 4 hours before serving.

Notes

For best results, use fresh culinary lavender and local honey. Garnish with lavender sprigs before serving.
