  • 1 cup onion chopped
  • 3 cloves garlic minced
  • 4 cups chicken broth
  • 1 can diced tomatoes 14.5 oz can
  • 2 tablespoons tomato paste
  • 1 teaspoon Italian seasoning
  • 2 cups uncooked pasta rotini or similar
  • 1 cup ricotta cheese for topping
  • 1 cup mozzarella cheese shredded, for topping

Instructions

Preparation Steps

  • In a large pot, brown the ground beef over medium-high heat until fully cooked. Drain excess fat.
  • Add the chopped onion and minced garlic to the pot and cook until the onion is translucent.
  • Stir in the chicken broth, diced tomatoes, tomato paste, and Italian seasoning. Bring to a simmer.
  • Add the uncooked pasta and cook until tender, stirring occasionally.
  • Serve hot, topped with ricotta and mozzarella cheese.
