  • 1.5 lbs chicken breast cut into bite-sized pieces
  • 2 tbsp olive oil for cooking
  • 1 small onion finely chopped
  • 4 cloves garlic minced
  • 28 oz canned tomatoes diced and with juices
  • 1 tsp dried oregano
  • 0.5 tsp red pepper flakes optional for spice
  • 0.25 tsp salt to taste
  • 0.5 cup fresh basil chopped
  • 0.5 cup grated parmesan cheese for serving

Instructions

Preparation Steps

  • Heat the olive oil in a large skillet over medium-high heat. Add the chopped onion and garlic, and sauté for 2-3 minutes until softened.
  • Add the chicken pieces to the skillet. Cook until browned on all sides, about 5-7 minutes.
  • Stir in the canned tomatoes along with their juices, dried oregano, red pepper flakes, and salt. Bring to a simmer.
  • Reduce the heat to low, cover, and let it simmer for 10 minutes, or until the chicken is cooked through.
  • Stir in the fresh basil and let it cook for another minute. Serve hot, topped with grated parmesan cheese.

For a complete meal, serve this dish with crusty bread or pasta on the side.
