  • 1.5 cups graham cracker crumbs finely crushed
  • 0.5 cup unsalted butter melted
  • 1 cup granulated sugar divided
  • 2 packages cream cheese softened, 8 oz each
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream cold
  • 1.5 cups fresh strawberries sliced

Instructions

Preparation Steps

  • In a medium bowl, combine graham cracker crumbs, 1/4 cup of sugar, and melted butter. Mix until well combined and press into the bottom of a 9-inch springform pan to form the crust.
  • In a large mixing bowl, beat the cream cheese and remaining 3/4 cup sugar until smooth. Add vanilla extract and mix well.
  • In a separate bowl, beat the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
  • Pour the cream cheese filling over the prepared crust and smooth the top with a spatula.
  • Chill the cheesecake in the refrigerator for at least 4 hours or until set.
  • Top the cheesecake with sliced strawberries just before serving.

Notes

For a more intense strawberry flavor, consider adding a layer of strawberry sauce on top of the cheesecake filling before adding the sliced strawberries.
