  • 4 pieces bell peppers red, yellow, or green
  • 1 pound ground beef lean
  • 1 cup cooked rice preferably jasmine or basmati
  • 1 cup shredded cheese cheddar or mozzarella
  • 1 can diced tomatoes 14 oz can
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper ground
  • 1 clove garlic minced
  • 0.5 cup onion chopped

Instructions

Preparation Steps

  • Preheat the oven to 375°F (190°C).
  • Cut the tops off the bell peppers and remove the seeds.
  • In a skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
  • Add chopped onion and minced garlic to the beef. Cook until the onion is soft.
  • Stir in cooked rice, diced tomatoes, salt, and black pepper.
  • Stuff the mixture into the bell peppers and place them in a baking dish.
  • Sprinkle the tops with shredded cheese.
  • Bake for 25-30 minutes until the peppers are tender and the cheese is melted.

Notes

Serve with a side salad for a complete meal.
