  • 1.5 pounds ground beef 80% lean
  • 1 cup yellow onion chopped
  • 3 cloves garlic minced
  • 2 tablespoons taco seasoning store-bought or homemade
  • 2 cups beef broth
  • 15 ounces black beans drained and rinsed
  • 1 cup corn kernels fresh or frozen
  • 14.5 ounces diced tomatoes
  • 4 ounces green chilies diced
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese
  • 0.5 cup cilantro chopped

Instructions

Preparation Steps

  • In a large pot, cook the ground beef over medium heat until browned. Drain excess fat.
  • Add the chopped onion and minced garlic to the pot, sauté until onions are translucent.
  • Stir in taco seasoning and cook for 1 minute.
  • Add beef broth, black beans, corn, diced tomatoes, and green chilies. Bring to a simmer.
  • Reduce heat to low and add heavy cream and shredded cheddar cheese. Stir until cheese is melted and soup is creamy.
  • Garnish with chopped cilantro before serving.

Notes

This soup can be served with tortilla chips or warm bread for a complete meal.
