Instructions
Preparation Steps
In a large pot, cook the ground beef over medium heat until browned. Drain excess fat.
Add the chopped onion and minced garlic to the pot, sauté until onions are translucent.
Stir in taco seasoning and cook for 1 minute.
Add beef broth, black beans, corn, diced tomatoes, and green chilies. Bring to a simmer.
Reduce heat to low and add heavy cream and shredded cheddar cheese. Stir until cheese is melted and soup is creamy.
Garnish with chopped cilantro before serving.
