  • 3.5 lb ripe peaches about 10 medium peaches
  • 1 tbsp lemon juice freshly squeezed
  • 0.25 cup water
  • 5 cups granulated sugar
  • 1 packet pectin 1.75 oz, fruit pectin

  • Peel and pit the peaches, then finely chop them.
  • In a large pot, combine the chopped peaches, lemon juice, and water.
  • Gradually stir in the pectin until dissolved.
  • Bring the mixture to a boil over medium-high heat, stirring constantly.
  • Add sugar all at once, stirring constantly to dissolve.
  • Boil hard for 1 minute, then remove from heat and skim off foam.
  • Ladle hot jam into sterilized jars, leaving 1/4 inch of headspace.
  • Seal jars and process in a boiling water bath for 10 minutes.

Notes

For best results, use fresh, ripe peaches. This jam can be stored in a cool, dark place for up to a year.
